Ziti Alfredo With Vegetables

Ingredients:
8 ounces ziti pasta or 8 ounces penne pasta, cooked and drained
1 tablespoon extra virgin olive oil
1 medium onion, chopped
2 cloves garlic, crushed
2 tablespoons butter
3 tablespoons all-purpose flour
1 1/2 cups fat-free half-and-half
1 cup nonfat milk
1 cup grated parmesan cheese
2 teaspoons dried italian seasoning
salt and pepper, to taste
1 (14 1/2 ounce) can italian-style diced tomatoes
1 (10 ounce) package frozen chopped spinach, thawed,drained
Directions:
1. In a large pot, cook pasta according to package directions.
2. In a small saucepan, saute onions and garlic in olive oil till browned.
3. In a large saucepan, melt butter; add flour and stir.
4. Slowly, add half and half and milk and simmer, stirring constantly, till thickened.
5. Add cheese and seasonings; stir till cheese melts.
6. Add tomatoes, spinach and onion mixture; heat through.
7. Pour over warm pasta, toss and serve.
8. Leftovers can be refrigerated and reheated in the microwave.
