Ziti Alfredo With Vegetables |

Ingredients:
8 ounces ziti pasta or 8 ounces penne pasta, cooked and drained |
1 tablespoon extra virgin olive oil |
1 medium onion, chopped |
2 cloves garlic, crushed |
2 tablespoons butter |
3 tablespoons all-purpose flour |
1 1/2 cups fat-free half-and-half |
1 cup nonfat milk |
1 cup grated parmesan cheese |
2 teaspoons dried italian seasoning |
salt and pepper, to taste |
1 (14 1/2 ounce) can italian-style diced tomatoes |
1 (10 ounce) package frozen chopped spinach, thawed,drained |
Directions:
1. In a large pot, cook pasta according to package directions. 2. In a small saucepan, saute onions and garlic in olive oil till browned. 3. In a large saucepan, melt butter; add flour and stir. 4. Slowly, add half and half and milk and simmer, stirring constantly, till thickened. 5. Add cheese and seasonings; stir till cheese melts. 6. Add tomatoes, spinach and onion mixture; heat through. 7. Pour over warm pasta, toss and serve. 8. Leftovers can be refrigerated and reheated in the microwave. |
