Zippy Turkey and Rice Casserole |

Ingredients:
1 cup brown rice, uncooked |
1 lb ground turkey |
1 onion, chopped |
1 (14 1/2 ounce) can diced tomatoes, with mild green chilies, undrained |
2/3 cup picante sauce |
2 teaspoons chili powder |
2 teaspoons ground cumin |
1 (16 ounce) can kidney beans, rinsed and drained |
1 cup cheddar cheese, reduced fat, shredded, divided |
Directions:
1. Cook the rice according to package directions. 2. In a large nonstick skillet, cook turkey and onion until no longer pink; drain. Stir in the tomatoes, picante sauce, chili powder and cumin; heat through. 3. Remove from heat, stir in beans, 1/2 cup cheese and cooked rice. Transfer to a 13x9 inch baking dish coated with cooking spray. 4. Cover and bake at 350 degrees for 30 minutes. Uncover; sprinkle with remaining cheese. Bake 5 minutes or until cheese is melted. |
