I made this up when I had some left over cheese from making homemade Mac and Cheese for my kids. It is really delicious, and has just enough zip to awaken the taste buds. Ingredients:
4 tablespoons flour |
4 tablespoons butter |
1 cup milk (lowfat is fine) |
1 cup velveeta cheese (light is fine) |
1 cup shredded mexican style cheese |
1 tablespoon taco seasoning |
1 teaspoon new mexico chile powder |
1/2 teaspoon cayenne pepper |
1/2 teaspoon garlic salt |
Directions:
1. Make a roux using the butter and flour. 2. When fully mixed and warm, slowly add milk; whisking to remove any lumps. 3. Add velveeta slowly until melted, then add shredded Mexican cheese. 4. Once all cheese is melted and smooth, add spices. 5. Serve with fresh veggies, corn chips, or pretzles. |
