This is a very hearty chili packed with beans and vegetables. Ingredients:
1 lb lean ground beef |
1/2 cup onion, chopped |
1 cup fresh mushrooms, chopped |
1/2 cup green pepper, chopped |
1/2 cup red pepper, chopped |
1 garlic clove, minced |
2 cups water |
1 (14 1/2 ounce) can diced tomatoes with green chilies, undrained |
1 (1 1/4 ounce) package taco seasoning |
1 (15 1/2 ounce) can great northern beans, rinsed and drained |
1 (15 ounce) can black beans, rinsed and drained |
1 (15 ounce) can pinto beans, rinsed and drained |
8 tablespoons cheddar cheese, shredded |
Directions:
1. In a large saucepan, cook beef and onion over medium heat until no longer pink. 2. Add mushrooms, peppers and garlic, cook and stir 3 minutes, until vegetables are almost tender. 3. Stir in water, tomatoes and taco seasoning. 4. Bring to a boil, reduce heat and simmer, uncovered, 30 minutes. 5. Add beans, simmer 30 minutes longer. 6. Top with cheese to serve. |
