This is a very good omelet. Everytime I serve it I get big smiles from the family. Goes great with fresh fruit and freshly squeezed orange juice. Enjoy Ingredients:
3/4 cup salsa |
1 cup artichoke hearts chopped |
1/4 cup parmesan cheese grated |
1 cup monterey jack cheese shredded |
1 cup sharp cheddar cheese shredded |
6 large eggs |
8 ounces sour cream |
tomato wedges |
parsley sprigs |
Directions:
1. Preheat oven to 350. 2. Butter a quiche dish and spread salsa on bottom. 3. Distribute chopped artichokes evenly over salsa. 4. Sprinkle parmesan over artichokes then sprinkle with cheeses. 5. Blend eggs in a blender until smooth. 6. Add sour cream to eggs and blend until mixed. 7. Pour egg mixture over cheeses then bake uncovered 40 minutes. 8. Cut into wedges. 9. Srve garnished with tomato wedges and parsley. |
