Ingredients:
6 dressed catfish (about 4 pounds) |
3 tablespoons lemon juice |
2 teaspoons salt |
1/4 teaspoon pepper |
1 cup all-purpose flour |
1 (8-ounce) bottle commercial italian dressing |
lemon wedges |
fresh parsley sprigs |
Directions:
1. Rinse fish thoroughly; pat dry. Brush inside of fish with lemon juice. Sprinkle salt and pepper over fish; dredge in flour. Shake off excess flour. 2. Place fish on well-greased rack of a shallow broiling pan. Baste fish with half of salad dressing. Broil 4 inches from heating element 6 minutes. Remove from heat; using a spatula, carefully turn fish. Baste with remaining salad dressing. Continue broiling an additional 5 minutes or until fish flakes easily when tested with a fork. 3. Transfer to a warm serving platter. Garnish with lemon wedges and parsley. Serve immediately. |
