This is a Greek , traditional , authentic , simple and very easy to make ( must be the easiest pie on planet earth ) cheese pie !! It belongs to the Greek equivalent food category that our neighbouring Italians call cuccina povera ( pizza belongs to their cuccina povera ) . Read more . It comes from the north western areas of Greece called Epirus . During dire poverty and very troubled times , being out in the crops or shephearding from dawn to dusk , they either prepared it for breakfast or took it along for lunch . They had only the basics in food materials thus the few ingredients . The actual recipe has pork lard rather than butter , giving it much more taste !! This delicacy is greatly and very oftenly enjoyed in those areas till today !!
Ingredients:
1 mug ( coffee mug ) flour ( all purpose )
1 mug milk
1 mug water
2 tbsp butter or pork lard
2 eggs
300 gr bread crumbs ( powdered )
400 gr premium feta cheese , crumbed with a fork
1 fistful ( not handful ) fresh finely-chopped srearmint ( or 2 tbsp dry )
1/2 anise seeds

Directions:
1. Preheat your oven to 220 dgr Celcius .
2. Smudge oven pan ( about 25 cm x 45 cm ) with butter or lard .
3. Scatter half of the breadcrumbs on the buttered surface and move pan to distribute them evenly . This will form a a non-stick crust .
4. Add all ingredients in a bowl and whisk until you have watery-doughy mixture .
5. Pour mixture into oven pan and move to evenly spread .
6. Toss remaining crumbs on top , evenly .
7. Place pan in oven and lower temp to 180 degr , immediately .
8. Bake/roast on middle level for 30 min , on lowest level for 5 min and grill on middle level for 5 min or until golden-brown .
9. Leave for 20 min to cool down and THEN cut into 8 pieces , 2 per serving .
