Great low calorie soup but tons of flavor! Ingredients:
1 lb ground turkey |
2 cups celery (sliced) |
1 cup onion (chopped) |
2 teaspoons garlic (minced) |
4 cups hot water |
1 (10 ounce) can potatoes (diced) |
2 cups frozen corn |
1 1/2 cups small shell pasta (uncooked) |
4 cups tomato juice |
2 (10 ounce) cans diced tomatoes with green chilies |
2 tablespoons sugar |
Directions:
1. In large stock pot cook the ground turkey, sliced celery, chopped onions and minced garlic until meat is cooked through. Drain. Stir in water, potatoes, corn and pasta. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until pasta is tender. Stir in the remaining ingredients and heat through. |
