Zesty Thai Salad Dressing

This low-fat Thai dressing is just enough for the one person in the house who's on a diet or watching fat grams. Perfect on fresh spinach, watercress, bean sprouts, cukes, or any fresh veggies.
Ingredients:
1 t peanut butter
1 t hummus (homemade or bought)
1 fresh ginger, minced & pressed
2 fresh cloves garlic, pressed
1/2 t gulden's spicy mustard
1/4 t garlic chili paste
1/4 t kosher salt
juice of 1 lime
2 t rice vinegar
1 t fish sauce (the best you can afford)
1/4 c fresh orange juice
handful of minced fresh mint, cilantro, & basil leaves
Directions:
1. Mix everything together.
2. Pour over salad.
3. Eat!
4. CEAHOW note: Remove 1/16th of your protein serving to accommodate using 1T of hummus in this dressing. Since it uses peanut butter, this is only for when you've reached Maintenance.
