Zesty Thai Salad Dressing |

This low-fat Thai dressing is just enough for the one person in the house who's on a diet or watching fat grams. Perfect on fresh spinach, watercress, bean sprouts, cukes, or any fresh veggies. Ingredients:
1 t peanut butter |
1 t hummus (homemade or bought) |
1 fresh ginger, minced & pressed |
2 fresh cloves garlic, pressed |
1/2 t gulden's spicy mustard |
1/4 t garlic chili paste |
1/4 t kosher salt |
juice of 1 lime |
2 t rice vinegar |
1 t fish sauce (the best you can afford) |
1/4 c fresh orange juice |
handful of minced fresh mint, cilantro, & basil leaves |
Directions:
1. Mix everything together. 2. Pour over salad. 3. Eat! 4. CEAHOW note: Remove 1/16th of your protein serving to accommodate using 1T of hummus in this dressing. Since it uses peanut butter, this is only for when you've reached Maintenance. |
