What a delicious way to serve your veggies - so simple and so tasty!! Ingredients:
1/2 lb mushroom (button or crimini, whole) |
1 (340 g) package baby carrots |
1 medium onion, peeled, cut into 1/2 inch-think wedges |
1 large bell pepper, cut into 8 strips (red, yellow or green) |
1/3 cup zesty italian dressing |
1/3 cup parmesan cheese, grated, divided |
Directions:
1. Preheat oven to 450°F Line a 15x10x1-inch baking pan with foil; spray with cooking spray. Set aside. 2. Toss vegetables with dressing and 1/4 cup of the cheese; spread into prepared pan. 3. Bake 28-30 minutes or until vegetables are tender, stirring after 15 minutes. Sprinkle with remaining cheese. |
