A Mexican classic, chorizo sausage, is used to season a variety of dishes, none so brilliantly as this rice dish. Ingredients:
1 tablespoon vegetable oil |
1 (3 1/2 ounce) package chorizo sausage, cut up |
1 medium onion, chopped |
2 garlic cloves, minced |
3/4 cup uncooked long-grain white rice |
1 3/4 cups swanson chicken broth |
1/2 cup chunky salsa |
1/2 cup frozen peas |
fresh cilantro leaves, chopped |
Directions:
1. Heat oil in a 10-inch skillet over medium-high heat. Add sausage, onion and garlic and cook until vegetables are tender, stirring frequently. 2. Stir in rice, broth and salsa. Heat to a boil. Reduce heat to low. Cover and cook for 15 minutes. Stir in peas and cook, covered , 5 minutes or until thoroughly cooked. Stir in cilantro. |
