ZESTY PECAN ICE CREAM This recipe came from an estate sale. I obtained it when I purchased the family collection from the Tinsley Estate in Waxahachie, Texas in 1994. Ingredients:
1 cup milk |
1 cup brown sugar packed |
4 egg yolks |
3 cups heavy cream |
1 cup pecan pieces |
Directions:
1. Heat cream., milk and sugar in heavy saucepan stirring occasionally until sugar is dissolved. 2. Place egg yolks in a bowl and whisk briefly. 3. Slowly pour in 1 cup of hot liquid continuing to whisk. 4. When mixture is blended slowly pour into liquid in saucepan. 5. Cook over heat stirring constantly for 8 minutes. 6. Strain into a clean bowl and cool thoroughly then stir in pecans. 7. Pour mixture into bowl of ice cream freezer and freeze according to manufacturer's instructions. |
