I'm not entirely sure where this recipe came from. It's been a newspaper cutout in the back of Mom's recipe book for years, anyway, and it's definitely one of our favorite soups. It's quick, easy, and very delicious! Hint: It's also better if it sits a little while before being devoured uncontrollably. Ingredients:
2 tablespoons olive oil |
1 medium onion, chopped |
2 garlic cloves, chopped |
1 red pepper, chopped |
3 3/4 cups vegetable broth |
1/4 cup water |
1 cup canned tomato, with juice |
1/4 cup brown rice |
1/2 teaspoon red pepper flakes |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1/2 cup peanut butter |
Directions:
1. Sauté onion, garlic and red pepper in olive oil until soft, about 5 minutes. 2. Add vegetable broth, water, tomatoes, rice, red pepper flakes, salt, and pepper and bring to a boil. 3. Simmer for 45 minutes. 4. Whisk in peanut butter. 5. Enjoy! |
