Scrambled eggs with a twist. The addition of sauteed mushrooms, diced garlic, and oregano add savory flavor. A dallup of yogurt and black pepper add complimentary zing. Ingredients:
3 eggs |
3 tablespoon water |
1 cup thick sliced mushrooms of choice |
1 large garlic clove, finely diced or sliced |
1 tablespoon crushed dried oregano |
a dash rice wine vinegar |
a dash soy sauce |
salt and pepper to taste |
olive oil for frying |
2 healthy dallups of yogurt for garnish + a sprinkling of black pepper on each dallup |
Directions:
1. Wash & slice mushrooms 2. Dice garlic 3. Heat pan with olive oil to coat 4. Beat eggs with water 5. Sautee mushrooms, garlic, and oregano over medium high 6. Add a dash of vinegar and soy as the mushrooms reach perfection (i.e. aroma + glossy hue) 7. As soon as liquid evaporates add just a touch extra olive oil to keep the eggs from sticking 8. Add egg mixture and cook on low until bottom surface forms, then turn delicately and finish cooking until desired texture is reached 9. Divide eggs among two plates, add yogurt and black pepper over each serving 10. Enjoy! |
