Ingredients:
1 cup all-purpose flour |
1/4 cup granulated sugar |
1/4 cup margarine, softened |
2 tablespoons low-fat plain yogurt |
3/4 cup sugar |
2 tablespoons flour |
1/4 teaspoon baking powder |
1/4 teaspoon salt |
1 egg |
1 egg white |
1 lemon, rind of, grated |
1/4 cup lemon juice |
2 teaspoons icing sugar |
Directions:
1. Combine flour, sugar, margarine and yogurt in food processor or blender. 2. Press evenly into lightly-greased 8-inch-square cake pan. 3. Bake at 325 for 25 minutes or until golden. 4. TOPPING: Combine sugar, flour, baking powder, salt, egg, egg white and lemon juice and rind in a food processor or bowl. 5. Mix well. 6. Pour topping over base and bake an additional 35 minutes or until top is set. Sift icing sugar over top when cool. |
