So easy but so good! Ingredients:
2 zucchini, chopped |
2 tomatoes, chopped |
1 cup fresh or thawed frozen corn |
1/2 cup thinly sliced green onions |
1/2 cup picante sauce |
2 tablespoons minced fresh parsley |
1 tablespoon lemon juice |
1 tablespoon oil |
1/2 teaspoon garlic salt |
1/4 teaspoon ground cumin |
1/4 teaspoon dried basil |
Directions:
1. In bowl, combine zucchini, tomatoes, corn, green onions and picante sauce. In small bowl, combine parsley, lemon juice, oil, garlic salt, cumin and basil. Mix well. Pour over zucchini mixture. Toss to coat completely. Cover and chill for 4 hours. 2. Serving quantity: Serves 8. |
