Zesty Hamburger Soup -Jeff Allen |

Soup with a kick for a cold winter day. Ingredients:
1 lb ground beef |
1 cup onion, chopped |
4 cups hot water |
2 cups frozen corn |
4 canned jalapeno slices |
2 (10 ounce) cans diced tomatoes with green chilies |
2 cups celery, sliced |
2 teaspoons minced garlic |
2 medium red potatoes, peeled and cubed |
1 1/2 cups uncooked small shell pasta |
1 (32 ounce) bottle v8 juice |
Directions:
1. In Dutch oven, cook the beef, celery, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the water, potatoes, corn, pasta and jalapeno. 2. Bring to a boil. Reduce heat, cover and simmer for 10-15 minutes or until pasta is tender. Stir remaining ingredients. Cook and stir until heated through. |
