Low Carb Slow Cooker Recipes Serves 6 Ingredients:
12 chicken drumsticks |
2 (14 ounce) cans tomatoes |
2 tablespoons quick-cooking tapioca |
1 tablespoon grated fresh ginger |
1 tablespoon snipped fresh cilantro or 1 tablespoon parsley |
4 garlic cloves, minced |
2 teaspoons brown sugar |
1/2 teaspoon crushed red pepper flakes |
1/2 teaspoon salt |
hot cooked brown rice |
Directions:
1. Place chicken in slow cooker. 2. Drain 1 can of tomatoes. Chop tomatoes from both cans. 3. For sauce, in a medium bowl combine chopped tomatoes, juice from 1 can tomatoes, tapioca, ginger, cilantro, garlic, brown sugar, red pepper and salt. Pour over chicken. 4. Cover and cook on low for 6-7 hours. Skim fat from sauce. |
