Zesty Fried Meatballs With Red Pepper Sauce |

Fried meatballs! I'd never heard of them until I saw this recipe! Recipe is from Sandra Lee Semi-Homemade Cooking 3. Ingredients:
1 lb lean ground beef |
4 eggs, divided |
1/4 cup milk |
3/4 cup shredded parmesan cheese |
1 cup italian seasoned breadcrumbs, divided |
1 teaspoon italian seasoning |
2 cups vegetable oil (or other frying oil) |
1 (7 1/4 ounce) jar roasted red peppers, drained |
1/2 cup catalina dressing |
1 teaspoon italian seasoning |
Directions:
1. Preheat oven to 425 degrees. 2. Lightly spray heavy duty baking sheet with cooking spray. 3. In a large bowl, combine beef, 3 eggs, milk, Parmesan cheese, 3/4 cup bread crumbs and Italian seasoning. Mix thoroughly and shape mixture into 1-inch meatballs. 4. In a small bowl, lightly beat 1 egg with 1 tablespoon water to make egg wash; in another small bowl, add remaining bread crumbs. 5. Dip meatballs in egg mixture, then roll in bread crumbs and place them on prepared baking sheet. 6. Heat oil in a heavy-bottom saucepan over high heat. Using a sloted spoon, carefully add meatballs to oil. Fry until golden brown, working in batches. 7. Remove meatballs from oil and arrange in a single layer on prepared baking sheet. Bake for 15-20 minutes. 8. For red pepper sauce, combine all ingredients in a blender and puree until smooth. |
