Zesty Chicken Salad with a Touch of Orange |

Good for brunch, lunch or light dinner. Add orange zest to give a burst of orange flavor. Ingredients:
25 oz chicken breast, boneless & skinless |
1/2 c dried cranberries, orange flavor |
2 stalks of celery, diced |
1/2 c low fat mayonnaise |
1/4 c orange juice, fresh squeeze |
1 tsp mustard, with white wine |
1 tsp dill, dried |
1 tsp tarragon, dried |
1 salt to taste |
1 pepper to taste |
5 c mixed greens |
Directions:
1. Bring water to a boil. Add lemon pepper and salt to taste. Add chicken. Bring water back to boil. Turn down to simmer. Cook chicken 13 - 15 minutes. 2. Put cranberries and celery in medium bowl. 3. In a small bowl add mayonnaise, orange juice, mustard, dill, tarragon, salt and pepper. 4. Dice chicken add to celery & cranberry mixture. 5. Pour on sauce and mix. 6. Divide greens between plates and top with chicken salad. |
