Zesty Chicken Breast With Peanut Sauce

This is another one of those peanut butter recipes from . I love these types of peanut sauces. Very often similar flavors are used in Thai recipes. Use sugar-free peanut butter if you think it is too sweet as is.
Ingredients:
8 boneless skinless chicken breasts
1 tablespoon brown sugar
2 tablespoons creamy peanut butter (or crunchy)
1/4 cup vegetable oil
1/2 cup soy sauce
1/3 cup fresh lime juice
2 cloves garlic, minced
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1 cup peanut butter (creamy or chunky)
1 cup unsweetened coconut milk
1/4 cup fresh lime juice
3 tablespoons soy sauce
2 tablespoons dark brown sugar
2 teaspoons finely minced ginger
2 cloves garlic, minced
1/4 teaspoon cayenne pepper
1/2 cup chicken stock or 1/2 cup vegetable stock
1/2 cup heavy cream
cilantro (to garnish)
Directions:
1. Wash, trim and pound chicken to 1/4 inch thickness.
2. Combine chicken and marinade ingredients in a large plastic bag and let marinate for 1 hour or overnight in the refrigerator.
3. Combine peanut butter, coconut milk, lime juice, soy sauce, brown sugar, ginger, garlic and cayenne in a saucepan over medium heat, stirring constantly for 15 minutes or until thickened.
4. Whisk in stock and cream and cook one more minute.
5. Remove from heat.
6. Preheat grill and place chicken on HOT grill.
7. Cook for about 5 minutes on each side (only turn once).
8. Serve hot with peanut sauce and garnish with cilantro.
