Nothing fancy, easy to cook, but great fresh taste. Ingredients:
2 teaspoons grated lemon zest |
1 teaspoon black pepper |
salt |
nonstick cooking spray |
1 lb boneless skinless chicken breast halve (i pound to an even thickeness) |
2 tablespoons lemon juice |
1 teaspoon dijon mustard |
16 ounces alfredo sauce (2 cups homemade even better) |
hot cooked pasta |
Directions:
1. Season with salt and rub equal amounts of lemon zest and pepper onto each side of the chicken breasts. 2. In a large non-stick skillet sprayed with cooking spray, saute chicken 4-5 minutes per side. Remove from skillet and keep warm. 3. Add lemon juice, mustard and Alfredo sauce to skillet, and heat thoroughly. 4. Serve sauce over hot, cooked pasta and chicken. |
