There's nothing like dressing up an old favourite. Goes well with roast meats and chicken. Kids love it. Ingredients:
1lb carrots |
1 slice lean bacon |
1 tablespoon chopped fresh rosemary |
1 finely sliced clove of garlic |
juice of 1 orange |
zest of half an orange |
1 tablespoon butter |
1 tablespoon orange marmalade |
salt and pepper |
Directions:
1. Peel and slice the carrots, 2. Fry or grill the bacon till crisp. 3. Place carrots in an ovenproof dish and crumble over the bacon. 4. Add rosemary, garlic, orange juiceand marmalade and stir to combine. 5. Dot with the butter and season with salt and pepper. 6. Cover with foil or with a lid. 7. Bake at 200 degrees for 50minutes. |
