This recipe coems from the Golden Estate that I purchased in 1989. This is an easy recipe to put together for a potluck or picnic. Goes a long way and can easily be doubled or tripled.
Ingredients:
2 cans black eyed peas rinsed and drained
1 cup chopped celery
1 cup chopped green pepper
3 hard cooked eggs chopped
1/3 cup sliced green onions
5 ounce jar sliced mushrooms drained
4 ounce jar diced pimento drained
3/4 cup italian salad dressing
Directions:
1. Combine ingredients in a large bowl tossing gently. 2. Cover and chill at least 8 hours stirring occasionally.
