This recipe has three different types of beans, corn, cilantro and lime juice and is always a hit at home and when taken to parties. We eat it as a bean salad but I have had people use tortilla chips to eat the 'salad'. It's best to make this salad ahead of time and let it marinate a couple of hours (or longer). Ingredients:
1/2 cup olive oil |
1/3 cup lime juice |
1/4 cup cilantro, chopped |
1 teaspoon cumin |
1 teaspoon salt |
1 teaspoon black pepper |
1 (15 1/2 ounce) can garbanzo beans |
1 (15 1/2 ounce) can black beans |
1 (15 1/2 ounce) can kidney beans |
1 (15 1/2 ounce) can corn |
1 cup yellow bell pepper, chopped |
1 cup red bell pepper, chopped |
1 cup red onion, diced |
Directions:
1. Drain beans and corn. Mix first six ingredients pour over beans and corn mixture. Gently toss. Chill until ready to serve (the longer this marinates the better it gets). |
