Zesty 30 Minute Bean Soup |

Big flavors from a quick, hearty soup. Ingredients:
1 tablespoon olive oil |
6 ounces chorizo sausage, cut in a small dice |
1 medium onion, diced |
3 cups chicken broth |
3 cups water |
1 (15 ounce) can great northern beans, drained and rinsed |
1 (15 ounce) can red kidney beans, drained and rinsed |
1 (14 1/2 ounce) can diced tomatoes |
1 large potato, scrubbed and diced |
1 large carrot, thinly sliced |
1/2 teaspoon dried oregano |
1/4 teaspoon red pepper flakes (optional) |
Directions:
1. Heat oil in a large pot over high heat. Add the chorizo and onion and cook for 3 minutes, stirring often. 2. Add chicken broth, water, both types of beans, tomatoes (with juice), potato, carrot and oregano (plus red pepper if using). 3. Cover and bring to a boil. Remove cover and simmer for 10 minutes or until potatoes and carrots are tender. |
