This is a sweet Italian doughnut that I always have at the carnaval. It makes a good snack and dessert! Ingredients:
1 quart of corn oil |
2 eggs |
1 cup flour |
2 tsp. baking powder |
pinch of salt |
1 1/2 tsp. sugar |
1 cup ricotta cheese |
1/4 tsp. vanilla |
1 1/2 cups confectioners' sugar |
Directions:
1. Heat oil over medium heat. 2. Beat eggs slightly. Add flour, baking powder, salt, sugar, ricotta cheese, and vanilla. Whisk ingredients together until blended. Batter should be sticky. 3. Drop by half tablespoons full (like you would if you were baking cookies) into oil and fry until golden brown, about 3 mins. 4. Drain on paper towel and roll in confectioners' sugar. Eat and enjoy! 5. Want to powder like the professional's? Place unpowdered zeppoles into brown paper bag. Add a couple heaping tablespons of powdered sugar. Shake bag. Take out and eat! |
