The addition of lemon-lime soda caught my eye. These soft, slightly sweet dinner rolls turned out absolutely delicious - no leftovers. (Preparation time does not include rising. Ingredients:
2 1/4 ounces packages active dry yeast |
3/4 cup warm milk (110 to 115) |
3/4 cup carbonated lemon-lime beverage |
1/2 cup butter, cubed |
4 eggs |
3/4 cup sugar |
1 teaspoon salt |
5 3/4-6 1/2 cups all-purpose flour |
Directions:
1. In a large mixing bowl, dissolve yeast in warm milk. 2. In a saucepan, heat soda and butter to 110°-115°. 3. Add the warm soda mixture, eggs, sugar, salt and 2 cups flour to yeast mixture; beat until smooth. 4. Stir in enough remaining flour to form a soft dough. 5. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. 6. Place in a greased bowl, turning once to grease top. 7. Cover and let rise in a warm place until doubled, about 1 hour. 8. Punch dough down. Turn onto a lightly floured surface; divide into four portions. 9. Divide each portion into nine pieces. 10. Shape each piece into a ball. 11. Place on greased (or parchment paper-covered)baking sheets. 12. Cover and let rise until doubled, about 45 minutes. 13. Bake at 350° for 18-20 minutes or until golden brown. 14. Remove to wire racks to cool. |
