Yummy Yam and Pineapple Casserole |

Jam-packed with yams, marshmallows and other delicious treats, this casserole will be a success whether served for dinner or dessert! Ingredients:
6 large yams |
2 (8 ounce) cans crushed pineapple, with juice |
1/2 pound golden currants |
1/2 teaspoon ground cinnamon |
1 2/3 cups miniature marshmallows |
Directions:
1. Cook yams in a large pot of salted water until tender, about 20 to 30 minutes. Dice the yams and place into a 9x13 inch baking dish. 2. Preheat oven to 350 degrees F (175 degrees C). 3. Stir pineapple, currants and cinnamon into the casserole dish. Sprinkle marshmallows over the casserole. 4. Bake in a preheated 350 degrees F (175 degrees C) oven for 35 minutes. |
