A Family friendly chilli that converts into a hearty soup. Add chopped fresh chilli in with the garlic for a more fiery finish. Ingredients:
1 tablespoon sunflower oil |
1 large red onion, chopped |
1 celery rib, chopped |
1 teaspoon cayenne pepper |
1 teaspoon cumin seed |
1 tablespoon smoked paprika |
1 kg minced beef |
400 g adzuki beans |
400 g pinto beans |
400 g canned tomatoes |
600 ml beef stock |
2 dark chocolate squares |
300 g long grain rice |
120 g cheddar cheese, grated |
Directions:
1. Heat the oil in a large pan and cook the onion, celery and garlic for 5 mins until softened. Add the cayenne, cummin seeds and paprika and cook for one more minute. 2. Stir in the beef , beans , tomatoes and stock. Bring to the boil and simmer gently for 1 hour. In the last 15 minutes cook your rice. Stir in the chocolate and check the seasoning. 3. Serve ontop of rice and sprinkled with cheese. |
