This is a really yummy salad, that makes a nice side for seafood, or a meal on it's own. It has so much flavour, there is no need for a dressing.
Ingredients:
250 g cherry tomatoes, quartered
1/2 cucumber, diced
4 hard-boiled eggs, chopped
1 small red capsicum, finely chopped
1/2 small red onion, finely chopped
200 g ashgrove wasabi-flavored cheese, diced
2 cups iceberg lettuce, shredded
1 avocado, diced
Directions:
1. Combine all ingredients in a salad bowl, and toss together!
