This recipes has been used in my family forever....It is a family favorite. Ingredients:
3 pounds or approximately 8 cups potatoes |
4 medium onions, thinly sliced |
boiling water |
3 teaspoons salt |
3 tablespoons butter or margarine |
2 tablespoons flour |
1/8 teaspoon pepper |
1/8 teaspoon paprika |
2 1/4 cups milk |
2 tablespoons chopped parsley |
Directions:
1. Preheat oven to 400 degrees; lightly grease a 2 quart baking dish. 2. Wash, pare, and thinly slice the potatoes. 3. Cook potatoes and onions together on top of stove for about 5 minutes witrh 2 teaspoons of the salt; drain when slightly tender. 4. Melt butter in a saucepan; remove from heat; stir in flour, paprika, and remaining salt; blend in milk. 5. Cook this mixture on stovetop until thickened and smooth. 6. In prepared dish, layer 1/3 of potatoes and onions' sprinkle with one tablespoon of parsley; top with 1/3 of sauce; repeat layers. 7. Bake uncovered 35 minutes or until top is browned. 8. You can add a layer of cheddar cheese right before taking out of oven.... this is optional.. |
