This is a delicious prune cake recipe that I got from www.post- when I was looking for a recipe that calls for dried pitted plums. It is very simple to do and tastes delicious, specially in the morning with a cup of coffee. I promise you will enjoy it as I did. Try it! Ingredients:
2 cups flour |
1/2 teaspoon salt |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1 1/2 cups sugar |
3 eggs |
1 cup oil |
1 cup buttermilk |
1 teaspoon vanilla |
1 (1 lb) box dried pitted prunes (or plums) |
1/2 cup butter |
1 cup sugar |
1/2 cup buttermilk |
1/2 teaspoon vanilla |
1/4 teaspoon baking soda |
1 cup nuts (optional) |
Directions:
1. Preheat oven to 350 degrees. Place prunes in pot with 1/4 cup water. Cook until prunes are soft but not mushy. Drain water and slightly mash the prunes into small chunks. 2. Place all ingredients including prunes in a mixing bowl and beat until ingredients are combined. Pour batter into an ungreased 9-by-13-inch pan. 3. Bake for about 40 minutes or until cake tester comes out clean. Remove cake from oven and, with the tines of a fork, poke holes in the cake. 4. For the cake sauce, combine butter, sugar, buttermilk and vanilla and bring to a boil. Remove from heat; add the baking soda and stir. At this point you may add the nuts (optional). 5. Pour the sauce over the cake (you can make some holes with a fork first). Let cake sit and cool before cutting. |
