Yummy Poached Lemony Salmon

Salmon poached in liquid Heaven! Poaching a process of simmering over a very low flame.
Ingredients:
1 lb salmon fillet
1 pinch oregano
salt and pepper
1 tablespoon olive oil
1/2 red onion, minced
1 teaspoon diced garlic
1/4 cup diced carrot
1 pinch brown sugar
1/2 cup chicken broth
1 lemon, juice and zest of
3 -4 peppercorns
1/2 cup white wine
1 tablespoon capers
Directions:
1. Season fillet with oregano, salt and pepper.
2. Heat oil in a large pan; saute onions, garlic and carrots for 3 minutes over medium high heat; sprinkle brown sugar over onion mixture to caramelize saute for 2 more minutes.
3. De-glaze with chicken broth, lemon juice and rind and white wine.
4. Place peppercorns, salmon on top cover and simmer over low flame for 7 minutes. Top with capers and serve.
