Yummy Pineapple Sheet Cake |

This is an old recipe, found in the pages of a magazine years ago. It's always a good stand-by recipe as it serves a crowd of 25 easily. Ingredients:
2 eggs |
2 cups flour |
2 teaspoons baking soda |
1 teaspoon vanilla |
2 cups granulated sugar |
20 ounces crushed pineapple, undrained |
1 cup walnuts, chopped |
8 ounces cream cheese |
1 1/2 cups powdered sugar |
1/2 cup margarine |
1 teaspoon vanilla |
1 cup walnuts, chopped |
Directions:
1. Mix all cake ingredients together with a wooden spoon until well blended. Pour into a prepared jelly roll pan. Bake at 350* for 15-20 minutes or until tests done with a toothpick. Cool well. Prepare topping by mixing the cream cheese, powdered sugar and vanilla until light and fluffy. Frost the cake and spread over the cake. Sprinkle with the chopped walnuts, cut in squares to serve. |
