These muffins are moist, low fat and may be prepared in a variety of ways to one liking. I like to use low fat buttermilk which really makes for a moist muffin. Flavor of these muffins improves with age. Often these muffins are a good change from our daily bagel and coffee routine. Read more . ! Ingredients:
1/2 cup sugar ( may be white , dark brown or splenda for baking ) |
1 1/2 cups 100% oat bran |
1 1/2 cups flour ( may be part whole wheat if desired ) |
2 tsp baking powder |
2 tsp baking soda |
dash salt |
1 tsp vanilla ( or other flavor if desired ) |
2 large eggs |
1/2 cup oil ( or apple sauce ) |
1 cup buttermilk or as needed |
optional: add some raisins if desired |
optional: add 1 tsp cinnamon to batter |
Directions:
1. Preheat oven to 400F 2. Line 12 cup muffin tin with paper liners 3. Mix together all the dry ingredients 4. Blend together all the wet ingredients 5. Combine both mixtures till well blended 6. Batter will be thick 7. Divide batter into muffin tins ( at least 2/3rds full )- I use an ice cream scoop to do this 8. Bake until golden and tested done, about 20 minutes or so 9. Remove from muffin tins 10. Let cool on rack 11. May be frozen |
