Yummy Large Blueberry Oat Bran Muffins |

Oatbran blueberry muffins Ingredients:
2 1/4 cups flour |
2 cups oat bran, not oatmeal |
1 3/4 cups sugar |
4 tablespoons baking powder |
1 teaspoon salt |
2 teaspoons cinnamon |
1/2 teaspoon nutmeg |
1 cup 2% low-fat milk |
4 eggs |
1/2 cup olive oil, the kind for baking |
1/2 cup applesauce |
2 cups blueberries |
Directions:
1. Mix dry ingredients, then in seperate bowl mix the wet ingredients . add wet to the dry. blend in 2 cups of fresh or frozen thrawed blueberries. If using liners for the muffins try to get the foil ones they don't stick when you try to get the muffin out. Bake 20 minutes at 400. makes 12 large or 18 smaller ones - . |
