I came up with this recipe today. I'm posting it now so I don't forget how I made it. My hubby loved them and they made the perfect lunch with some freshly made quacamole and taco chips. Ingredients:
1 lb cooked chicken, shredded |
4 slices deli ham |
4 sandwich buns |
1/2 small onion, sliced |
8 ounces queso fresco, sliced thin |
2 tablespoons mayonnaise |
1 tablespoon dijon mustard |
seasoning salt, i use sylvia's soulful seasoning |
Directions:
1. First, slice your fresh sandwich rolls in half and place a slice of ham on each bottom half. (I purchased fresh bakery rolls and that really made this sandwich special). 2. Place the shredded, cooked chicken on top of the ham. Sprinkle the top of the chicken with some seasoned salt (I use Sylvia's Soulful Seasoning). 3. Then, place the Queso cheese on top and lastly the sliced onions. 4. Place under a LOW broil in your oven until the cheese melts. I broil the top half of the buns also so that they're nice and warm. Watch them closely so you don't burn the edges! 5. Make your dijon sauce by combining the mayo with the dijon mustard. Spread this onto the top half of your roll and assemble your sandwiches. 6. Gobble them up! They're yummy! |
