Yummy Fried Okra With Potato And Onion |

I never was a fan of okra, until my Dad's wife made this for me. Makes a great side dish. Ingredients:
1 lb of okra (better if it's fresh, but it can frozen, just make sure you thaw it first) |
3 medium potatoes |
1 medium onion (white or yellow) |
1/4 c. canola oil |
corn meal |
salt & pepper to taste |
Directions:
1. Cut stems off the okra and slice into 1/4 thick slices 2. Slice potatoes thinly (similar to the thickness of scalloped potatoes) 3. Chop the onion 4. Coat okra in corn meal mix in a ziploc bag 5. Heat oil in a frying pan 6. Combine veggies in frying pan and saute until they get soft. Stir frequently so it doesn't stick to the bottom of the pan. 7. Season with salt & pepper 8. And enjoy! |
