Here is a recipe that I came up with for the hot lunch program were I work. I was needing a soup the kids would eat and this did the trick. My kids ask for it when I say I am going to make potatoe soup. How to decide how many potatoes to use, about one medeum-large potatoe per-person. This is very good with peas added to it. Ingredients:
2 -5 lbs potatoes, peeled and inch cubes |
1 onion, chopped fine |
1 teaspoon salt |
1 teaspoon garlic powder |
1 (15 ounce) jar cheddar cheese sauce |
water |
Directions:
1. Prepare potatoes and place in cold water to cover. Add onion, salt, and garlic powder. Bring to a boil and cook until potatoes are soft. Add cheddar sauce and stir until cheese sauce is mixed inches. |
