What smells and tastes more refreshing in the summer, than sliced cucumbers? YUMMY! Ingredients:
4 cucumbers, sliced |
1 white onion, med. (or yellow spanish) |
8 ounces sour cream |
1 cup half-and-half cream |
2/3 cup salad dressing, not mayo |
1 tablespoon dill |
1 tablespoon kosher salt, plus 1 t |
1/2 cup sugar (or to taste) |
1 1/2 teaspoons black pepper, coarse ground (optional) |
2 tablespoons cider vinegar |
Directions:
1. The night before: Peel cukes and slice to desired thickness. 2. Slice or chop onion to desired thickness. 3. Mix together in a bowl with 1 T. kosher salt. 4. Cover with a heavy plate and refrigerate overnight. 5. The next morning: Drain cukes, but do NOT rinse. 6. Mix the remaining ingredients in a separate bowl, until smooth. 7. Pour over cukes/onions and mix thoroughly. 8. Cover and refrigerate for AT LEAST 2-3 hours - longer for best flavor. 9. ENJOY! |
