This is a great twist on the origional packaged brownie, especially if you like a hint of coconut! Sift some powdered sugar over the top and wrap in plastic wrap with ribbon- makes perfect gifts! Ingredients:
1 (20 ounce) package brownie mix |
1/2 cup canola oil |
2 eggs |
1/2 teaspoon coconut extract |
1 (8 ounce) package cream cheese, softened |
2 eggs |
1 teaspoon coconut extract |
1 teaspoon vanilla extract |
3 3/4 cups confectioners' sugar |
1 cup flaked coconut |
Directions:
1. Brownies:. 2. preheat oven to 350 degrees. 3. beat brownie mix, oil, eggs and extract on medium until well blended. 4. set aside 1 cup for topping. 5. spread batter into greased 13x9 in baking pan and bake 12 minutes. 6. Filling:. 7. in a small bowl, beat cream cheese, eggs, extracts and sugar until smooth. 8. fold in coconut flakes. 9. after brownies are baked for 12 minutes, spread cream cheese mixture over brownies in pan. 10. drop remaining cup of brownie batter over filling by teaspoons. 11. bake additional 45 minutes. 12. cool and enjoy! |
