This recipe can be gluten free as long as the soy sauce used is gluten free. Any type of vegetables work with this, but the best are pepper and onion mixes or Asian veggie mixes. Ingredients:
2 boneless skinless chicken breasts |
1 tablespoon ground ginger |
1/2 tablespoon minced garlic clove |
1 tablespoon vegetable oil |
2 tablespoons soy sauce |
32 ounces frozen vegetables |
1/2 teaspoon ground pepper |
1 cup cooked brown rice |
Directions:
1. Cut the chicken into 1 inch pieces. 2. Heat the oil, ginger and garlic over medium to medium high heat. 3. Brown the chicken. 4. Add veggies, and cook until veggies are crisp-tender. 5. Stir in soy sauce and pepper. 6. Serve over side of rice. |
