Ingredients:
1 1/4# sliced carrots |
1/2c sliced dry apricots |
1/2t dry mustard |
1/8t red pepper |
2t honey |
3 small scallions |
3t evoo |
salt to taste |
zest & juice of 2 limes |
Directions:
1. Cook 1st 5 ingred (juice only of limes). In a separate pan, cook carrots in boiling/salted water (2-3 mins)...drain. Put into serving bowl. Add apricots & scallions. Pour lime mixture over top and gently toss. Top with lime zest and serve. |
