Yummy Buttermilk-banana Muffins |

YUMMY! YUMMY! I need to use up all my perishables before we go on vacation. So I made up this recipe. They turned out so good. I am putting this on the zaar before I forget what I used in them. I am definately keeping this one. Ingredients:
3 eggs |
1/4 cup oil |
1/2 cup applesauce |
1 1/2 cups mashed bananas (leave a little lumpy) |
1/2 cup buttermilk |
1/4 cup milk |
1 cup sugar |
2 teaspoons baking powder |
1 teaspoon cinnamon |
2 1/2 cups flour |
1 salt |
sugar, for on top of muffins |
Directions:
1. Preheat oven to 350 degrees. 2. Beat eggs until foamy. 3. Add wet ingredients. 4. Mix until creamy. 5. Add dry ingredients. 6. Mix well. 7. Pour into greased muffin tins and sprinkle a pinch of sugar on top of each muffin. 8. Bake for 15-20 minutes. 9. They are done when they are brown around the edges and bounce back when you touch them. 10. Enjoy! |
