Fresh fruit muffinsthat can be eaten any time of day. Makes a great lunchtime/afterschool snack! Try peaches, blueberries, strawberries, or even chocolate chips! Ingredients:
1 3/4 cups all-purpose flour |
1/3 cup white sugar |
2 1/2 teaspoons baking powder |
1/2 teaspoon salt |
3/4 cup nonfat milk |
1 egg |
1/3 cup applesauce, unflavored |
1 cup fresh blueberries |
Directions:
1. In a large bowl, whisk together flour, sugar, baking powder, and salt. 2. Add milk, egg, and applesauce; mix until ingredients are moistened, do not overbeat. 3. Stir in fresh fruit. Spoon batter into twelve greased muffin cups. 4. Bake at 400 degrees F (205 degrees C) for about 20 to 25 minutes, or until tops spring back when lightly touched. Serve warm. |
