Here’s another easy and delicious one for y’all! You won’t believe how much your family will love this one. There’s something about the ham and Swiss w/ the Jack cheese. The Mex-corn adds a hint of Southwest to the recipe although it’s not really Tex-Mex. Read more . You could add some jalapenos if you like it a bit more spicy.
Ingredients:
8 ounces swiss cheese, shredded
8 ounces monterey jack cheese, shredded
2 cups ham, chopped
6 ounces fresh mushrooms, sliced
1 can mex-corn, well drained
6 eggs
1 cup milk
salt and pepper to taste
2 packages pillsbury crescent rolls
paprika
for a yummy, almost no carb variation, beat the eggs a little longer and leave out the bread! yumm
Directions:
1. Preheat oven to 375; 350 for glass dish
2. Place crescent rolls in bottom of casserole dish.
3. Put chopped ham, sliced mushrooms, corn, and half of cheese on top of rolls.
4. Combine eggs, one at a time, and milk and beat on medium speed until well mixed.
5. Pour over other ingredients.
6. Salt and pepper to taste, and top w/ remaining cheese.
7. Sprinkle w/ paprika.
8. Bake for approximately 30 minutes, until set.
9. Recipe calls for 15” x 10” dish.
10. Cool until set, just a few minutes. Cut into desired sized squares and watch it disappear!
