great use for summer tomatoes. easy to make goes well with any meat dish. Ingredients:
4 large fresh tomatoes |
1 12 ounce pkg. sliced bacon |
mortons natures seasoning or other seasoned salt. |
Directions:
1. preheat oven to 375 degrees 2. fry bacon until crisp (keep bacon drippings warm) 3. wash and cut the core out of the tomatoes 4. with your paring knife carefully cut around the insides of the tomatoes being careful not to pierce the outer skin (your will stuff the inside of the tomatoes with bacon) do not remove the tomato meat. you just want to create pockets inside the tomatoes. 5. place tomatoes in individual oven proof soup crocks 6. crumble bacon 7. sprinkle the inside of the tomatoes with natures seasoning or seasoned salt. 8. stuff the inside of the tomatoes with crumbled bacon 9. heat the bacon grease 10. when it is hot drizzle a spoonful into eac tomato 11. place the tomatoes in the oven and bake at 375 degrees for 30 minutes or until tender 12. tomatoes may start to fall apart. 13. serve hot |
