This was given to me by a friend and in my humble opinion it is the best apple cake ever!! Moist, spicy and goes well with just a powdered sugar dusting or if you like frosting, pair it with a cream cheese frosting Either way, you'll love it!! Ingredients:
2 cups sugar |
4 cups apples, peeled and diced |
2 cups flour |
2 teaspoons baking soda |
1/2 teaspoon salt |
1 1/2 teaspoons cinnamon |
1/8 teaspoon nutmeg |
1/2 cup margarine, melted |
2 eggs, beaten |
1 teaspoon vanillla extract |
1 cup walnuts, chopped |
Directions:
1. In a large bowl add the apples and beaten eggs and mix well with a wooden spoon. Add remaining ingredients and stir to blend. Pour into a greased and floured 9x13 inch pan and bake for approximately 1 hour at 325*. Check with a toothpick, it may take a few more minutes to finish depending on your oven. 2. Cool. 3. I like to serve my cake dusted with powdered sugar and topped with a dollop of fresh whipped cream! |
