The name says it all- loosely (very loosely) based on my sister's standard chocolate chip cookie recipe. Great with vanilla pudding, but try it with butterscotch too- even better! Ingredients:
2 1/4 cups all-purpose flour |
1/8 cup ground flax seeds |
1 teaspoon ground cinnamon |
1 teaspoon baking soda |
1/4 teaspoon salt |
1 cup unsalted butter, softened |
1 (3 1/4 ounce) box vanilla instant pudding mix |
1/4 cup sugar |
3/4 cup brown sugar |
2 eggs |
1 teaspoon vanilla |
1/2 cup butterscotch chips |
1/2 cup miniature semisweet chocolate chips |
3/4 cup walnuts |
Directions:
1. Mix together flour, soda, salt and cinnamon in a large bowl and set aside. 2. Cream butter, sugar and pudding mix. 3. Beat in eggs until light and slightly fluffy. 4. Mix in vanilla. 5. Mix in dry ingredients a little at a time. 6. Place walnuts in large zip top bag. Pound with a mallet until almost pulverized. 7. Mix walnuts, butterscotch chips and mini chocolate chips into dough. 8. Roll dough in to 1 inch balls and place on baking sheet 1 inch apart. 9. Bake at 375 for 8-10 minutes in a conventional oven. If using a convection oven bake at 350 for 8 minutes. 10. Remove to wire racks to cool. |
